Ingredients:
• 2 cups of rice
• 1/2 cup of water
• 1 cup of grated coconut
• 1/2 tsp of salt
Cooking method:
Step 1: Soak the rice for about 4 to 5 hours, wash and drain the rice and powder it.(Do not powder it too fine).
Step 2 : On low flame dry roast the rice flour until it is evenly heated about 5 minutes. Take care not to brown the flour.
(Step 1 and 2 can be skipped if we want to use ready made roasted rice flour)
Step 3: Mix the rice flour and salt well together. Sprinkle palm full of water evenly on the flour a few times over and over till the flour is moist enough to hold together but still in a powder form.
Step 4: In the puttu maker drop in a spoonful of coconut and then a fistful of rice flour and repeat the layers till top of the puttu maker.
Step 5: Steam it till you see the steam coming out of the top of the puttu maker (about 5 minutes). When done, with the help of a long skewer Push the puttu out on to a plate.
Black chana/ Kadala curry:
Ingredients:
• 1 cup black channa/kadala
• 1 cup of grated coconut
• 1 tbsp chilli powder
• 1/4 tsp turmeric
• 2 tbsp coriander
• 10 shallots - thinly sliced
• 1 tsp cumin
• 1/2 tsp fennel seeds
• few curry leaves
• Oil as needed.
• Salt as per taste
Cooking method:
Soak black channa over night and cook it in a pressure cooker with turmeric powder, salt and curry leaves with water level just above the channa.
Dry roast coconut, shallots, cumin seeds, fennel seeds.
After about 2 or 3 minutes add coriander powder, turmeric and lastly add chilli powder. Continue for a minute or 2.
Grind the above with very little water
Add the ground mixture to the cooked chana and cook it for some time till masala is well blended with chana. While cooking add a couple of whole cardamom to give it a little flavor. Add more water if you need or cook for longer time if there is too much water
Seasoning: Heat the oil in a pan and when it's hot, add the mustard seeds. When they pop, add the shallots and curry leaves. Roast until the shallots are golden brown. Then bring the cooked chana into the pan and the kadala curry is ready to go with puttu.
